ChitoFresh
Thailand, as a significant global contributor to the production and export of bananas, faces considerable post-harvest losses due to spoilage before the produce reaches consumers. This not only results in wasted resources but also limits the economic benefits for farmers and exporters (Bangkok Post, 2023). Additionally, Thailand is one of the world's largest producers of shrimp, generating substantial quantities of shrimp shell waste annually. This waste, often discarded or underutilized, poses an environmental challenge. However, shrimp shells are a rich source of chitosan, a natural biopolymer with antimicrobial and biodegradable properties (ScienceDirect, 2023). By utilizing shrimp shell waste to produce ChitoFresh, we aim to create a circular economy that transforms a significant byproduct into a valuable resource for reducing food waste and promoting sustainability.​

Why is extending the shelf-life of produce important?
Fruits and vegetables provide essential nutrients and vitamins and are vital for human health. A lack of availability of these produce has caused 1.5 million deaths due to a low intake of vegetables and 2 million deaths due to a low intake of fruits annually. Yet of the 1.3 billion metric tons of food lost each year (enough to feed 1.26 billion people), fruits and vegetables are among the most wasted foods with 45% of all fresh produce lost or discarded. (Harris et al., 2023)
